Strawberry Arugula Salad


Strawberry Goat Cheese Salad with Balsamic Dressing Arugula Salad


For Salad:
2 cups arugula
1/2 cup sliced strawberries
1/3 cup crumbled goat cheese
1/4-1/2 cup chopped fresh mint (depending on love of mint)
1/4 cup sliced almonds or avocado

Make it a Complete Meal- Additions: I prefer grilled chicken (organic), especially if you add the avocado! It’s a match made in heaven.

Vegan Meal option: No Goat Cheese, Add Quinoa.

For Dressing:
1/4 cup olive oil
2 Tbsp balsamic vinegar

Sweet Option:

Blend in 6 sliced strawberries and a few drops of liquid Stevia (depending on strawberry sweetness) to make a strawberry balsamic dressing!


For Salad:
In a large bowl gently mix together all ingredients.
Gently toss with dressing just until the salad is moistened.
(You can also serve the dressing on the side if desired)

For Dressing:
In a blender or food processor, add olive oil, balsamic vinegar and optional additions of strawberries and stevia.  Blend on high until smooth.  If the dressing is too thick, add more olive oil.
