Serves: 2-3 large waffles
Ingredients
- 3 eggs, separated
- 1 cup almond flour
- ½ cup tapioca flour
- 1 tbsp coconut flour
- ½ tsp baking soda
- ¼ tsp sea salt
- ¼ cup coconut milk
- 1 tbsp white vinegar
- 1 tsp cinnamon
- 1 tsp pure vanilla extract
- 1 tbs pure maple syrup
- ½ cup blueberries (or berry of choice)
Instructions
- In a large bowl, beat the egg whites until stiff, but not dry
- (about 1-2 min)
- In separate bowl, whisk together the coconut milk and vinegar. Set aside.
- Combine the almond flour, tapioca flour, coconut flour, cinnamon, baking soda, and salt in a large bowl. In a smaller bowl, lightly beat the egg yolks with the coconut oil or ghee, maple syrup, vanilla and coconut milk/ vinegar mixture.
- Pour the wet ingredients into the dry. Gently fold the egg whites into the batter and once folded in, gently mix in the berries.
- Using a large spoon, spread the batter into the waffle iron, try not to overfill. Close and bake the waffle until there is no longer steam escaping and the waffle is crisp and golden brown. Remove the waffle and keep warm.
