Paleo Chocolate Chip Cookies
I love to have my cookies and eat them too:) I can only do that if they are paleo though! This recipe was created after a few different trys… and after sharing with a group of women that were drooling over them- I knew I had to post it! Without further ado…
Tiff’s Paleo Chocolate Chip Cookies
*I do recommend you REFRIGERATE THE DOUGH for 30 min. You may want to preheat oven after
you mix the dough, but you don’t have to.*
Preheat over to 350 degrees. Prep a cookie sheet with parchment paper for easy clean up.
Ingredients:
• 3 ¼ cups almond meal
• 1 tsp sea salt
• 1 tsp baking soda
• ¼ cup melted coconut oil
• 2 eggs
• 2 tbsp creamy almond butter
• ¼ cup maple syrup
• 1 tsp vanilla extract
• 1 cup vegan chocolate chips (chopped dark choc chunks or cocoa nibs work great
as well!)
Directions:
1. Mix dry ingredients into a bowl.
2. Add wet ingredients, stirring gently the chocolate last.
3. *I do recommend you REFRIGERATE for 30 min (recommended)
4. Using an ice cream scoop, place dough balls on cookie sheet, and press down in
middle to approx. ¼- ½ inch flat
5. Bake for about 8-10 minutes- the tops will be golden brown when ready.
6. Cookies are best when cooled in the refrigerator for a while… I would suggest also storing in
refrigerator.
