Zucchini Hummus- Basic Recipe
(Paleo, grain free, dairy free)
* 2 large zucchini, cut into chunks
* 1/4 cup tahini
* 1-2 cloves garlic, peeled
* 2 Tablespoon olive oil
* 2 Tablespoons lemon juice (lemon zest is a great addition as well)
* 1 teaspoon sea salt
* 1 teaspoon cumin
* 1 teaspoon cayenne and/or chili powder, smoked paprika
(Salt to taste)
Combine all the ingredients in a blender or food processor and process until smooth. Taste and adjust the seasonings to taste. Refrigeration allows the flavors to combine even better. Best used within 3 days.
Recipe Add-in Suggestions:
Sundried tomatoes, basil, artichoke hearts, roasted peppers, spinach, sweet potato, pine nuts, roasted garlic… be creative!
